Why use a long stem pipe?
The primary benefit of a Sherlock or Gandalf pipe is smoke cooling. Because the smoke has to travel 10 inches through the glass stem, it loses heat along the way, resulting in a much less harsh throat hit compared to a short spoon pipe.
